Gouda and Camembert. Learn what should accompany your cheese.

During the silver level class you will make a Dutch Gouda and a white rinded Camembert. You will learn how to make up a cheeseboard and what should accompany your cheese. Red and white wine and cider will be paired with a selection of artisan cheeses including Jean's farmhouse cheeses. Although designed for an intermediate level cheesemaker, beginners will enjoy this class too.

Blue and Mozzarella. How to professionally judge a cheese.

During the gold level class you make a blue veined semi-soft cheese and a stretched curd mozzarella cheese. You will learn how a cheese is professionally judged by sampling and critiquing a selection of fine Artisan cheeses. Jean will share her knowledge as a national cheese judge and teach you what to look for in a great cheese. Cheesemakers of all levels will enjoy this day.
